You can certainly use it at nearly all convenience stores (maybe all of them?).
However it certainly isn’t used as much as in other countries.
You can buy a cash card called Suica and add it to your Apple wallet and pay with that.

Honestly, yes things are a bit busier during Sakura season, must mostly at the famous places. But everyone is on a regular work schedule so weekdays are not particularly crowded.
